Then one day I went in the kitchen and just started creating. Playing with salad toppings and making my own vinaigrette allowed me to add some of my own flavor. Once I became vested into what went on my salad, I was sold. Salad can do no wrong especially when I am in driver’s seat. This pear and pomegranate kale salad was just what I needed to fulfill my need for an easy, hearty salad perfect for this cold weather we’ve been having.
How to Make a Quick and Easy Kale Salad
The good thing about this kale salad is kale is so hearty and it fills you right on up. For this salad, I decided to stay light and not add meat. However, you can add all sorts of goodies to your kale salad with all types of dressings. But first, you must prepare your kale. Remove the leaves from the stem, discarding the stem. Rinse the kale leaves and chop them roughly. This is where it gets fun. You can add so may different flavors: roasted chickpeas and butternut squash; sweet potatoes, cranberries, and goat cheese; strawberries, blueberries, and gorgonzola cheese; sweet potatoes and avocado dressing; and salmon, parmigiano, and croutons for a lovely Caesar salad. The possibilities for a quick and easy kale salad are endless.
What is a Good Dressing for Kale Salad
When I make kale salad, I realize that sometimes simple is best. A simple vinaigrette will do just nicely. For this pear and pomegranate pear salad, I made a basic white balsamic vinaigrette. What I love about making vinaigrette’s is you can kind of make it your own. For this vinaigrette, I blended a high quality olive oil, white balsamic vinegar, lemon, shallot, garlic, and salt and pepper. Easy Peasy, right?!
How to Make This Quick and Easy Kale Salad
Pear and Pomegranate Kale Salad with Candied Pecans
- cutting board
- 1 bunch kale destemmed and rinsed, roughly chopped
- 1 whole red pear rinsed and sliced
- ½ cup pomegranate seeds
- ½ cup candied pecans roughly chopped
- ½ cup parmigiano-reggiano shredded
White Balsamic Vinaigrette
- ¾ cup olive oil
- ¼ cup white balsamic vinaigrette
- 1 shallot chopped
- 1 garlic crushed
- salt and pepper to taste
Pear and Pomegranate Kale Salad
- Remove the stem from the kale and rinse the leaves. Roughly chop the kale leaves.
- Place kale in a bowl and assemble the rest of the ingrediesnts on top of the kale.
- Drizzle with the White Balsamic Vinaigrette.
White Balsamic Vinaigrette
- Add the vinegar, shallots, and garlic to a bowl.
- Whisk and slowly drizzle in the olive oil. Add salt and pepper to your taste.
