Make this delicious Lemon Blueberry Chia Oat Pudding that is great for when you are on the go and need something healthy and tasty.
1 cup rolled spelt oats
¼ cup chia seeds
1–1/2 cup almond milk
¼ tsp of lemon zest
¼ cup blueberries
Add all of the ingredients in a pint sized jar and stir.
Optional: Although the almond milk makes this sweet, if you need it sweeter, you can add agave nectar.
Let it sit overnight in the refrigerator or at least for four hours.
Serve and enjoy.
