Good eating truly takes planning. This lemon blueberry chia oat pudding was just the start to a new beginning for me.For the last couple of mornings I have been grabbing the most random-est of things to eat for breakfast as I am leaving out the door. I have grabbed a handful of almonds, oatmeal bars, chicken nuggets. Did you get the gist that my breakfast meals are scattered? I am really trying to be more intentional with what I am eating. Instead of stumbling upon things to eat, I need to set aside time to make my meals healthy, filling, and yummy. This lemon blueberry chia oat pudding was just the start to a new beginning for me.
After running some morning errands, I was able to come home and do some meal prepping. I do not like leaving out of the door with the bare minimum in my stomach. Breakfast is a very important meal of the day, if not the most important. By not eating for hours during your sleep, it is important to wake up and fuel your body to push you through the day. Fuel your body with some of the good stuff, lemon blueberry chia oat pudding is just that.
Here is what you need.
One thing I absolutely love about this is the simplicity of the meal. I can spend under 2 minutes and a short walk to the refrigerator and do not have to worry about breakfast the next morning. I add the rolled spelt and the chia seeds to the mason jar.
Then, I add the almond milk and lemon zest. This is so important to add because you get the lemon flavor. I zest about a half of a lemon into the mixture and stir.
Once this step is completed add your blueberries and stir. Put your lid on your jar and refrigerate overnight of for at least 4 hours. The next morning you stir once more. Add more blueberries if you like and eat away. As much as you like as it is very healthy for you!

Lemon Blueberry Chia Oat Pudding
Ingredients
- 1 cup rolled spelt oats
- ¼ cup chia seeds
- 1-1/2 cup almond milk
- ¼ tsp of lemon zest
- ¼ cup blueberries
Instructions
- Add all of the ingredients in a pint sized jar and stir.
- Optional: Although the almond milk makes this sweet, if you need it sweeter, you can add agave nectar.
- Let it sit overnight in the refrigerator or at least for four hours.
- Serve and enjoy.
