
I’m participating in the 2020 Juneteenth Cookout Takeover. This initiative was established to encourage the celebration of Juneteenth – a jubilee of freedom to commemorate the end of slavery – and to amplify the food traditions of black culinary creatives. Juneteenth (a merge of the words/date June Nineteenth) marks the date in 1865 that the last enslaved people learned of their freedom. And for over 150 years since, Black American families, home-cooks, chefs, and culinarians have commemorated the summer holiday with a wide range of food traditions that tell a story of the perseverance of a people.

Let’s Talk about Crawfish Recipes
Being from Louisiana, I grew up eating many seafood dishes with crawfish leading the pack of seafood deliciousness that I like to devour. Crawfish eating in Louisiana is easily one of the most special times that people get to share with one another. It’s not just the mudbugs that lead to sweet memories. It is all the work and preparation that goes into cooking crawfish that bring people together. It’s the washing and rinsing, the soaking and boiling that requires the assistance of more than one. Eating crawfish in Louisiana is an activity that brings together people of all walks of life for one common purpose, to enjoy the company of all over a table full of crawfish.



Crawfish Recipes



Eating crawfish is more than just sucking the heads. The meat is in the tails and its like eating baby lobster. It’s delicious. One of my family’s favorite crawfish recipes is this easy Crawfish Étouffée recipe. It’s a cream based dish that delivers flavor and packs a nice punch of spice. You can serve this with rice and biscuits the side. Another dish that I make is a crawfish cream sauce. It tastes amazing when served over a fried or blackened catfish filet or can even be tossed with pasta for a quick pasta dish that is different from the norm.
